This multigrain Saison was first fermented in Oak with a proprietary blend of yeasts before being refermented in steel with fresh Hachiya Persimmons, Guava puree, Jasmine blossoms and Brettanomyces. The result is delicate, lush, dry and bright. It possesses dry tannic structure along with harmonious aromatic impressions from vanillins, tea, fruit and esters.
